Well they have white skin buy not necessarily white features. When they depict actual white people, they show them with very prominent noses and yellow hair

Good point but if those are not natural characteristics of people, you have to wonder what exactly it is that makes the Japanese see them as Japanese in appearance.
Maybe they are so influenced by Western ideas of fashion and beauty that they can't see it, they just think of it as their own ideals.

I think it's a combination of things. Like they have much smaller noses and mouths than we do, so anime characters have small noses and mouths. Yet they have small eyes, and anime characters have huge eyes.

yeah that's also a huge part of it. it's also just easier to show an expression with big eyes especially when the rest of the features are so stylized.
Disney animation also usually has large eyes or those outlines around the eyes
