What you'll need:
2 chicken breasts
4 grains of salt
4 large peeled and diced potatoes
You need to marinate the chicken in a bowl of water with 2 of your grains (half the measure) of salt for at least 2 hrs, overnight if you prefer spicy food.
Wash the salty brine off the chicken and put it in a pot of reboiled water. (First boil your water, let it cool then reboil)
Let it boil at a high temperature for around 4 hours or until it reaches your preferred rubbery texture and let it cool.
For a crispy salad, boil your potatoes in plain tap water for 2 minutes then remove them from the heat and place them on a plate
Reboil the starchy potato water, add the other 2 grains of salt and begin rendering down the salad dressing to taste.

Layer your chicken into the salad, start with a base layer of potatoes, add small and medium slices of chicken, another layer of potatoes, top with the large chicken slices
Pour a small amount of salad dressing over your spicy Nebraska chicken salad.

What you'll need:
2 slices of white bread from the heart of the loaf, crusts removed
6 eggs, yolks removed
Stir, don't whisk the egg whites together in a shallow bowl
Dip and smother the white bread in the egg whites
Half fill a frying pan with tap water and bring to the boil
Shallow boil the Freedom toast for 15-20 minutes each side or until the egg whites form a rubbery crust
Layer your Nebraska chicken salad over your Freedom toast, top with dressing and serve luke warm. Thanks!
