Do you have any experience cooking cervelles d'agneau? I have some for the first time and I am probably going to breadcrumb and shallow fry them, but poaching and such is not out of the question. If you’re determined to chow down zombie-style Just dust the brains in seasoned flour. Season with white pepper and never use black pepper as a substitute. 1/4 tsp sea salt. Salt from the sea of galilee is ideal. Dunk in an egg wash. Forget about free range eggs for this dish. You need an older egg but not so old as to have a sulphur odor. Roll the brains in bread crumbs. 5 day old San Francisco sourdough is ideal.
