How may have a limitation for you because you may not have a Oven? Nor do I have a toaster oven to try this method - However there is much you can do with a fry pan.
So for those who have a full oven. Best with a Cast Iron - Teflon or other non stick surface backing pan. Heat oven to 204-232 C aka 400-450 F You need a lot of heat.
Oil free french fries - Slice exactly the way you like them Thick or Thin - Thin does work better. The science on this is - Potato is loaded with water. So the oven heat first boils off the water and THEN the Sugars in the Potato caramelize. Thick just takes more time a lot more time.
Best if you turn them over once half way through and time depends on how thick and there is a learning process - You are going to burn a batch but a Potato is dirt cheep so its just time lost.
Potato chips of course are done the same way - Thin is tricky because timing is tight and learning process is longer to get them just right I do mine Thin
Frying pan - I have not tried no fat chips or fries BUT I often use a Cast Iron skillet (Others wood work) and Just slice round slices of Potatoes about 1/8th inch thick or so and lay them on the Skillet and wait till brown one one side and turn over - You can get them VERY Crispy!! No Fat - Does help to wipe on a very thin amount of oil on the Pan - Napkin wipe on - Otherwise it makes turning them over at the half way point a sticky problem - Still works and often the soaked in oil of the Cast Iron is plenty good enough.
Potatoes without oil for my tastes requires some added seasoning - Depends on the type of potato - Those Gold Potatoes just need salt. For backing or red potatoes I add various spices in tiny amounts.
One and Only one-two downsides
Takes longer than frying AND They can be as crispy as you want a Potato to be. What YOU CANNOT GET - Is time to just leave them for very long before eating. They will be Hygroscopic, absorb water and get soggy - French Fries of course will do the same but it takes longer for them to get soggy.
ducky now Vegan eats a whole lot of Potatoes and when she posted in a topic about food and told us how much, I suggested my no oil method and she says she has been doing it for some time and its fav method as well. Healthy

You might give oven baking and I mean No Oil oven baking or a very small amount of oil - I have tried so many No oil no skin alternatives to Fried Chicken - All kinds of dip in egg or yogurt - all kinds of tricks to make a quality dipping batter for skin less chicken - all kinds of added things to get a CRUNCH from the finish - For sure you can get some tasty alternatives.
It also has the same problem oil free potatoes - All methods I have tried failed if I wanted to take chicken as cold for pot lucks at Park events with friends - Crispy just does not last all that long with anything I tried - So honest you can make a tasty alternative with no oil or a hint of oil for no stick to pan and lose the coating when you lift out the chicken to turn over once.
Try backing Y don't cha - Skin on still is better without the added frying oil - Even better for you without the skin, but does take experiments for Crisp/Crunch/

I got a George Foreman™ grill for $1 at a garage sale and it works! I have cooked a chicken breast and a steak on it and it's not bad.
I'll keep you posted for updates during the month where I trade my deep fryer for a George Foreman grill.
