Roasted on Bar-B-Q using olive oil to baste is really nice. Probably works in oven just like any other vegy to roast.
Just like Green beans - If you boil in water you need to keep the Lid OFF - or it goes grey and ugly. Also to keep it super green it should be pulled from boiling water and rinsed off in COLD Water or a Bowl with Ice Cubes to stop the internal cooking after its removed.
Still ends up making your Urine smell something terrible for a while
