Raw spinach can be ok. Cooked spinach has this gross slimy texture and awful taste that makes me want to vomit.

Try it the way Italians and Chinese cook it. FAST stir fry with garlic. Two minutes total or forget about it. Oil keeps it crispy crunchy. Chinese add a small amount of Chicken stock at the very end. It should exit the pan greener than when it went in. Italians even cook the stems separately and eat as a treat. With garlic of course.
Over cooking makes it look ugly and slimy.
