Tijuana is well it is almost beyond words to describe. Imagine where you live. Can you imagine what it wood be like to drive across the border and in less than 3 minutes you feel as if you are in the poorest village of Zimbabwe.
Photo is typical of what most of the city looks like - Well sure there are rich zones and quality shopping centers. Even a few top rated restaurants. But anyone with enough money to buy a house puts up bars cause well the poor people will be trying to just take the window glass.
There are communities where lots of expats from US live on the dirt cheep. Protecting simple window glass is a full time job in TJ.

Yes it does. I took care of my grandma's house while she was dying so I have a pretty good grasp of it. My grandpa taught me a lot and I will always be grateful to him for it. I really recommend it if you can afford it.

There's some crummy USB audio recorders out there that remind me of when I tried using a keylogger (keyllama) at work (mixed results, should be around here somewhere still).
Audacity would work for capturing audio output if it's VoIP, but I don't think you can just set it up to record audio output on a thumbdrive, so that's out.
There are plenty of phone apps, native and otherwise, but that would only be one ended. This looks promising, but I might have to explore some more options.
What is your setup like at work? A cordless headset? A corded phone? I need some details. Although Syntax probably could send you some equipment from the Kremlin. For the glory of Satan let's do this. I bet someone at the phone losers of america forums could help too.

Shoot if so there are multiple old fashioned easy ways to do that. Its more difficult at work if the feed to the ear piece is via blue tooth and even then one can pick up the blue tooth signal and record the audio. If its a simple plug in audio connection? As easy as a Y connector with the split feed going into a miniature recorder. Just make sure the tap is high impedance. I can think of 10 ways to pull off a audio tap off of a computer. Not black market stuff at all

I don't think that'll work. The audio goes through USB, so I would have to assume that the headsets have a USB connector rather than a 3mm jack. Plus, how does it solve the recording issue? Is it a splitter?

I am assuming he has access to more than just one USB port - for recording there are dirt cheep recorders - One for sure that inserts into USB port and looks exactly like USB connector. Just that with the 3mm audio jack one can pick up dirt cheep recorders right off Craigs list - He did not reply re is the feed via Blue Tooth - If not then the super old fashioned inductive pick up works just great when attached to the audio cord to earphone - Even a junked guitar string pick up can be taped to the cord and away audio goes.

Not my area of expertise but betting such is easy to find at pro audio stores for musicians. Probably not dirt cheep but they have so many gizmo's for Midi and Mada interfaces computer USB to all that outboard junk Rock music makers use. One recent walk through in a San Diego pro audio store and I kept picking up gizmos that made me jealous - Its all for audio feed so in and out.
