My stock is water only without any added flavour. Throw the packets away. Pork or lard will add all the flavour you need.

Cook the noodles in very fast boil for 19 minutes.

At the very end add 1/4 cup of Cheese Whiz. Add globules of uncooked pure pork fat or 1/4 cup lard that has been warmed up a little before adding. Cook for nor more than 2 minutes.

Overcooking is necessary because it provides the mouthfeel that is the product of coalescing with the Cheese whiz and fat globules.
This is a Ramen you drink rather than sip and chew.

1: Ramen by tradition is never made with Dashi stock. Nothing at all wrong with Dashi as a stock but its not the basis of any Ramen.

Probably the most sad part of any Ramen discussion on any chan and that includes 4Chan because I have discussed this subject there. I am betting only .01% or less of Americans have tasted real Ramen. So they have absolutely no idea of what Ramen is supposed to taste like.

I try and explain it this way. For those who have enjoyed Jack Daniels or another quality whiskey - Serve them brewed Tea and tell them its just instant Jack Daniels. JD or Makers Mark takes years to make before it can be sold. Brewed tea is 3 minutes of instant brown liquid and its dirt cheap.

Only recently is the real Ramen just minutes away from a pick up or sit down to enjoy it. Its one of those few things that is just not practical to make at home.

Good movie that is worth a view and does show how much work Ramen really is.
