> fish sauce
If you do not eat fish Toss away the fish sauce. It is made from fermented sardines and its for Asian dishes you probably do not eat. Its very strong and stinky stuff. I should toss the bottle I have as well. And I love fish.

I see recipes for non-seafood stuff that ask for fish sauce, will try at least one of those before tossing it
Isn't it really good for cooking? S' the sense I get from Internet

Fish sauce is probably not very good on it's own, anyway.

The sauce is very important in Vietnamese and Thai dishes. When I say fermented I mean FERMENTED. Powerful mean as fuck stuff. I normally might suggest that you put some on your finger and taste it - Don't even think about doing that. However when used carefully for intended dishes - Its important. One bottle will last you a lifetime. Its already so super salty its going to last centuries.

Best if you try a Thai dish in a restaurant that uses it or maybe a bowl of Ramen at home and put some of the broth in a tea cup and add a smidgen of the sauce and taste it. Trust me you do not want to sample it on its own -

So like soy sauce? Once I consumed so much soy sauce I threw up
Poured a little on a saucer, dabbed my finger in, licked finger, repeat while drinking beer for... A while

Yes in a way like Soy sauce. Salty. Now imagine adding STINKY Fish Really really REALLY stinky fish ground up fish left out to rot. No other way to say this - Rotting stinky fish. Mashed and loaded into the Soy sauce. Lots more salt than Soy sauce. Its one of those things that if a Thai place leaves it out because a lot of white only customers might find it off putting the dish does not taste right.

I cannot think of one other food item that has to be used with such caution. NOW its possible that you are one who finds it easy to try with a taste test. I DOUBT it because you are not a fish eater. Nor is a sauce poured on fish in Viet or Thai dishes.

Yes, it is comparable to soy sauce. I have no idea what it tastes like on it's own though, it smells really fishy. I use it to make panang curry.

Damn great stuff - Easy to make BUT takes a hell of a lot of stuff most people do not have in kitchen. Anon F must have a well stocked Asian kitchen.

It's a curry dish with coconut milk, and red chili paste as the base. You add in vegetables, bamboo chutes, and your choice of meat (I use chicken). You add in a teaspoon of fish sauce for flavoring, you can add more if you want it saltier. For vegetables you can use whatever you want.

They're kind of similar to water chestnuts. Have a slightly fiberous texture, not to the point of being woody though.

Well I bought it but it's like something you make. It's basically a soup that is as full of protein filled ingredients as it possibly can be before it becomes a stew

It comes in a little box and you can keep it in your pantry!

Anonymous C replied with this 10 years ago, 5 minutes later, 2 hours after the original post[^] [v] #675,453

Asian markets have bamboo shoots in cans - same of course for water chestnuts and a world of valuable things for fast cooking. All kinds of mushrooms that one cannot buy fresh EVEN in a large Asian supermaket because they cannot be shipped any distance.

Yea Chili dog - Bamboo shoots are more a texture added element - And the chewy varies depending on size and how prepared - Not so much a taste element as chewy mouth feel - and filling. Probably something that no one would dislike Unless they are on the old side when fresh. That could be to much to chew.

what were they talking about, Thai curry?? that
Idk thats not a good suggestion tho
Most of the simple good food I know how to make has onions potatoes carrots peppers tomatoes and grains and I usually just have like quinoa and jasmine rice

one cool thing is literally all that junk but with chicken thighs and u put mustard and ketchup and Worcestershire sauce and salt and pepper all over the chicken and put it in a pot and put all the slice veggies on it and put a lid on it and it simmer for like hours like hot pot style
it sounds weird but it a family recipe somehow
i thought it sounded weird like cheap and weird but it was good and Ethnic certified

> What is the difference between chicken thighs wings n breasts they are all chicken?

Huge difference. Breasts are white meat. Can end up very dry and does not do well with over cooking. Thighs are dark meat. Has more fat. Can stand up to stewing-overcooking. Texture is very different. One can overcook and get away with it when using white meat. Its just so much better to treat each differently.
