Currently there is a trend around the city centre here (Europe, if you must know) of obscenely expensive burgers. You can spend more than what you would at a classy restaurant for a burger, fries and a milkshake.
They do a damn good burger and the fries are cooked in peanut oil but it is still hard to justify.
Where did these outlets all come from, or maybe it is just here.

I have not encountered any of those outlets myself. Also from a city centre in Europe. Europe is a big place.

Oh. Off the top of my head we have City picnic, bulletproof burgers and 5 guys. All 3 of these places are quite new.

5 guys is not a gourmet burger...unless things are different in Europe. They are a "fast casual" restaurant. Their burgers are around $5-6 which is more than McDonalds but less than a sit-down restaurant. They are kind of an in-between thing.

The 5 Guys here looks like a warehouse and is just plastered with big cards printed with positive reviews of the franchise. It feels like they are trying harder to just convince you the burgers are good than actually deliver a good burger. The burgers aren't really above backyard barbecue quality.

Mine looks just like that! What bothers me about Five Guys is if you order fries they give you like a mountain of fries. Like it make Supersize fries look like Happy Meal fries. It just seems a bit too gluttonous.

Not available where you live. In and Out is the same way about lots of fries. Just one size and its inexpensive. And they cook them exactly as you ask them - Vary the degree of crispy and salt levels can be 1/4 1/2 however you ask for them to be salted.

I've seen hipster burger places all over Europe. Eaten it a few of them in price ranges from $5-6 to up to $20 for a burger + sides/drink extra.
Some of them were really good, but if I'm paying that much I rather go to a nice place and eat a real steak.
But yeah, I was also wondering why did they become a thing. Same with craft beer. It's everywhere.

The reviews on the walls just really piss me off for some reason. I'm just left thinking: "Okay, I'm here in your restaurant buying your food. I will know how good the food is once you serve it to me. Do you really need to keep trying to sell it to me?" It's like they are trying to establish a bunch of cognitive dissonance so that no matter how the food is, you come away feeling like it was good because you can't disagree with so many rave reviews and don't want to admit you just paid way too much for a mediocre burger.
Which, yeah if that's intentional, is a good marketing strategy. Lots of companies sell shit at huge markups to make their customers feel like they are getting a quality product. I can't fault them for wanting to make their customers feel satisfied, but it just looks like cheap psychological manipulation from my end.
