Take a good (12oz or so) sirloin and rub in some cajun seasoning (Tony Chacheres or similar), black pepper, and garlic powder. Get a skillet and pour in some extra virgin olive oil and put it on a hot burner until the oil just starts to smoke. Throw the steak in and sear it a couple of minutes so the outside is blackened and the inside is still cool and raw (aka "blue rare"). Put the steak on a plate and butter it (yes butter it) with 2 tablespoons of butter. Then pour on some Sambal Oelek chili paste. Fry an egg sunny side up (in the still-hot skillet with the olive oil and all the seasonings) and set it on top of the steak. Bon appetit!
Goes well with a bottle of brandy, blue cheese, and kalamata olives.

The egg yolk mixes perfectly with the rare sirloin. If you cook it over easy or sunny side up so the egg yolk is uncooked, it mixes with the chili paste and butter to make a delicious sauce.

Steak tartare puts a raw egg on raw hamburger. It's not totally uncharted territory.
I guess it's kind of a riff on steak tartare. Not brave enough for a raw egg on raw hamburger but I'll take an undercooked egg on a rare steak.

The egg and the steak are eaten as one thing. The egg is like a "topping" on the steak if that makes sense. The olives and blue cheese are nibbled separately (though I have put blue cheese on a steak and it is amazing). Remember the egg is not like scrambled eggs but is very lightly cooked. A medium rare egg, if you will.

Sounds good but I was surprised to see you using olive oil on a high temperature. Can you defend this as I always think of olive oil for lower temperatures than what a quickly cooked steak would want.
