in physics an "observation" is just another phrase for "detection" and a photon bouncing off a mirror or being absorbed by an electron is technically an "observation." the term comes specifically from tests where observers attempted to detect what particles were doing and learned that "observing them" altered what they are doing which means you can't "observe" a particle without altering it in some way. merely measuring what's going on within a closed system is enough to change the result. but, many people take the term "observation" too literally and think there has to be some kind of intelligent entity which "observes" something and that's not the case. two particles interacting in the void of space is as much an "observation" as placing a detector in a particle beam and watching the result in a lab.

Quantum theory states that it would need to be observed by something other than itself to exist. If you'd said something like "it was was observed by its corresponding anti-particle", you might have been on the right track.

Squeegee has already stated that the interactions between two particles is a form of observation. Humanity doesn't need to exist for observation to take place. At the beginning of the universe, there were no particles to interact. Subsequently, quantum theory is wrong, thereby proving that the Earth is flat. This is common knowledge.
