Chorizo is a loose meat and prone to falling out, while bacon comes in strips which stay in the burrito better. Also the vinegar and spice in the chorizo risk overpowering the cheese and potato flavors. I'll grant you chorizo is more Mexican but talking about a burrito with sriracha and cheese we're so far from authentic Mexican food it hardly makes any difference.

Have you tried boiled potatoes, with boiled eggs, and boiled cheese on a boiled tortilla? It's far too flavorful for most USAmericans!
