Think about it. The ending supports this theory too well. GLaDOS, who might have still been upset with Chell for the events of the past game regardless of any transformations to her character during the events of the sequel, decided to finish off her adversary after she helped finish off Wheatley. So she tricks Chell into thinking that she was going to let her go free to the surface yet once those elevator doors opened to reveal three turrets starring right at her. This is where she was gunned down dead. The rest of the scene was merely a representation of Chell's soul ascending to Heaven while the turrets sung her up.
The wheat field at the end of the segment is represented as Heaven or as this in Greek mythology, which is what Portal is heavily inspired from, Elysium which is often represented as a wheat field. Not to mention that Chell was reunited with the beloved Companion Cube which was incinerated in the first game. This symbolizes being reunited with loved ones in the afterlife.

that is just repeating what you said in the op. If it was heavily inspired by Greek mythology one would notice it if they were to play the game, they wouldn't have to watch some fan theory video on it.
