Makes it so that the air doesn't dry out too much, which can help prevent nosebleeds. Dehumidifiers I would guess drain the air if moisture so that things sensitive to moisture do not get damaged.

Dehumidifiers are for use in the summer when humidity magnifies the discomfort of heat. The idea being to make 100 degrees in Florida feel like 100 degrees in Arizona, for example.
