that real solar system mod is cool. fixes the size and scales and atmospheres to realistic numbers. Kerbin is actually 10% the size of earth and has 20% the atmosphere. distances are also scaled. even time is scaled, a kerbin day is like 1/4 a real day or something. using more realistic values makes it much, much harder. not even sure if stock parts are capable of lifting much into orbit without all being refactored. pretty much when i see the realism mod i see people using non-stock part packs and a lot of those packs have unrealistic parts. i'm sure there's a "realism" part pack to go along with the real solar system mod somewhere. i think it's very cool, but that video just kinda highlights why a we won't be going to mars in a one shot rocket. it's impressive that they did it, but i think it's kinda against the spirit of the realism mods to build super unrealistic vehicles. i think it just kind of shows just exactly how forgiving the game version of rocket science is.
i'm planning on trying "ultra hard mode" and installing the real solar system mod as well as a mod that requires communications networks be built and maintained. i'm waiting for a couple of things though, they are building it into unity 4 which will improve performance a lot and they are (supposedly) working on splitting physics across more than one thread. the single biggest performance issue with high part count vehicles is due to all physics calculations being done on one core. either they'll get performance improvements or i'll have built out a new machine but probably later this year i'm going to try combining the hardest mods and doing one excruciatingly difficult series of missions.
also, i never really play career because the ordering of activities doesn't make logical sense to me and i find it hard to ever be doing what i want to be doing but there are some cool sounding career overhauls that might be worth looking into. i think probably the hardest thing possible would be to run all the realism mods and overhaul the career mode and tech tree and missions to more mirror reality. it just always immediately bothers me that i have more capability in a new game to launch a kerbal into orbit than fly a plane and that's just silly. as it stands in career mode you can just ignore aircraft altogether.
anyway, off on a tangent. that was an impressive stack of fuel that guy took to duna.

Unless the time delay for radio transmissions is simulated, this is unrealistic.

it is! the remote tech mod is very cool. i tried it out for several hours and built out multiple networks. any unmanned satellites have to have line of sight contact with the dish at KSP. so when you launch it has to have an established link, then throughout flight if you lose LOS you lose control. there are other mods that will let you literally program satellites to execute maneuvers without a connection to mission control and that looks pretty sweet too. with enough skill you can program a flight computer on the pad and launch it and leave it and it'll go do its thing. but, to ensure you can always take direct control of a craft then you always want coms.
the mod overhauls the antennae so they are short, medium, and long range. it also adds a variety of dishes with different capabilities. basically the only thing it really does is draw a line from satellite A to satellite B and if the line is not too long then cool. a line is drawn from satellite to KSP on the ground at kerbin and as long as there's a line to KSP then cool. but, as soon as you get too far away or orbit out of LOS then the line is broken and all controls become unresponsive till the line is drawn again. so, a satellite network would be something like 3 satellites arranged in an equilateral triangle around the planet's equator. if they are sufficiently far then LOS is never broken and there will always be a link back to KSP. any satellites within range of the network get a line drawn to them.
if you're sufficiently far away and are also using a long distance com array then you have to contend with transmission delay. so a satellite to duna can easily talk to a network that includes polar com sats but you do want to make sure and input any commands sufficiently far in advance. probably trying to land on duna without a programmed flight computer would be impossible with the lag. orbital stuff is easy, you've always got plenty of time to input the command, let the ship execute, verify the maneuver was successful, and then input another command for the ship to execute hours later.

Is there a mod that turns off the sound effects when you're in space?

maybe, idk. there's no gameplay hinged on sound so it's inconsequential. i play with sound off to listen to music all the time. it could certainly be done without adding or removing any gameplay. but that kind of realism would only add to the ambiance, like a realistic texture pack. what really matters is that realistic fuel weight and thrust are modded into a realistic parts pack. nothing breaks games more than OP mod packs.

Kind of like enchanting in Minecraft...

enchanted gear is op in minecraft, it's so much better than even diamond that it's absolutely game breaking. if you don't have exactly the same prot 4 armor as your opponent you're dead. they should have given enchanted gear special abilities instead of straight up damage in the case of weapons or health in the way of armor. it makes every other enchant useless. but, don't get me started on the uselessness of low level gear. you use a wooden pick long enough to get stone and then you never make it again. making a wooden sword is useless because you can so easily get right to stone. you can just skip leather armor, you'll have full iron before you ever get enough leather for armor. 1 fucking cow should be enough to craft a whole leather suit. it's like wooden gear, just let us make it instantly and don't make us farm all day for rare mats to make useless junk.
and they even made leather armor colored. why? no one wears it. there's no point. they could have made it useful by simply making heavier and more rigid armors slow you down. improve the swing rate of lighter weapons and slow down iron and diamond swords. give them more damage, but don't give them the same rate of damage. that's stupid. that leads to ONE choice and any other choice is completely inferior. but no, let's let them color the leather armor and then they'll wear them despite having zero utility and being harder to collect the mats for than iron :/
enchantments could have made weapons drop more loots, deal a small Damage over time (like a bleed or fire), or make you slightly faster, they didn't have to also add an insane damage multiplier to the mix making it the only choice. someone might choose fast boots instead of prot 4 boots if there was some fucking reason to. at least that's what i remember about PvP in minecraft. if you don't have prot 4 armor and the damage multiplied sword then your only real pvp option is to run because as we found out 1 dude could take on the entire faction without breaking a sweat, even with everyone wearing partially enchanted diamond armor and carrying swords with at least the 3x multiplier.

@previous (squeegee) Exactly!
Like, it's fine for singleplayer where it's you against a bunch of standard-issue zombies and skeletons and creepers, but as soon as you step into a world with other sentient players, it's the early bird that gets top dog.
