Not an expert. That said I do eat a lot of Mexican food. Live 45 minutes from border.
History of Mexican food is loaded with Pork. But in much of Mexico people still do not have refrigeration. So people buy Pork for Carnitas. Cuts of ham are popular. Meat is used the same or next day.
Have seen bacon in stores in Mexico city. Have never been offered bacon for breakfast in Mexico. Sausages like chorizo is very popular.
Cannot think of a single time any local Mexican joint had bacon in anything.
