I have pondered this question for many years, and have come to the conclusion that the ability of cameras to capture in color must indicate that color is an actual property which objects have, and not just side-effect of light absorption/reflection.

You mean is blue corresponding to an actual range of wavelengths of light as perceived by the standard human visual system? Then yes. There are perceived colours that are not corresponding to any wavelengths by the way. Also keep in mind that the normal meaning of colour is the perceptual phenomenon rather than the light stimulus itself, so in that sense, no colours exist independently of the perception anyway.
