I've never seen them on a rack, always in Styrofoam trays packs of four. Delicious stewed up with black eyed peas. Tried to roast such once and never again re:rock hard skin.

Because I watch my health and I love using Ham Hocks to flavor say Collards or Beans - I cook up in water and chill to remove the fat from water and then cut up Hocks and remove the Fat
Works great but it is a bit more work
