They just are. I always liked Spock because of his logic and reasoning, his intelligence, and his incredible strength. The unique friendships that Spock had with Kirk and Bones also made the show interesting. Data was also awesome, because he was a cyborg with super-human intelligence and super-human strength. His struggle to be more human also made for very interesting character development throughout the series.

Peter Parker/Spiderman. His sheer power and awesomeness as Spiderman combined with his ongoing struggle to hide his secret identity from the rest of crew really made him stand out as a character for me.

Really, Spot is probably the most interesting character. Gene Roddenberry's wife comes in a close second.
