I don't think you're supposed to keep the default message. I think it's just there to remind you that a signature is available so you can either turn it off or change it to "Becky's Legal Advice and Cat Sitting Service Inc." or whatever you want. A lot of people just don't bother changing it.

Back in the day when having a smartphone was a big deal I think it was like a status symbol to have that little "Sent from my iPhone". Back then I thought it was a bit déclassé and showing off, also probably untold millions in free advertising for Apple. Now it's just stupid because everyone has a smartphone and no one is impressed with your ability to sign a 2 year contract for a phone.
