protip: cats are soft on top, and sharp on bottom. also they are sharp on the front.
don't mess with their backside either.
just touch it once lightly on the back and jerk your hand away real quick because cat's can turn upside down real fast and get you with their sharp side. you're doing great though, keep it up.

But that wouldn't stop her from biting me, which is what happened.

It would reduce her mobility and make her easier to handle. If you can get the cat sack on.

Yikes. What color is she and does she belong to your family?

Yes, she's part of the family but the humans she trusts are out of town for the weekend. She's a typical brown-grey striped tabby.

alright, i'll give you some real advice. first off get some of her preferred treats.
then do the scruff of the neck paralysis thing for a few seconds as demonstrated here with a binder clip: https://youtu.be/T9TmmF79Rw0
kinda ideally: after you do this let her go and give her a treat. do this a few times for a few minutes and repeat the whole thing throughout the day. after you've reinforced a positive treat with it go ahead and pinch the scruff of her neck and then use your other hand to gently open her mouth and touch her tongue. let her go, give her a treat. do that throughout the next day or so. pretty quick you'll be able to grab her and she won't flip the fuck out when you try to give her a pill.
if you don't have the time to train, paralyzing them like that can still help. i grab my cat, open her mouth, pop the pill in and get it on the back of her tongue and then let her close her mouth and i kinda pet her throat and relax the grip on her scruff to let her swallow.
she always gets a treat and is really good with pills now. of course, my cat is missing both of her sharp ass canines and only has little teeth.
so good luck!

The scruffing thing is the only real way to handle a cat who does not want to be handled. Good call.

Problem with that is, you have to get the cat IN the sack.

Maybe I wasn't forceful enough with scruffing. I did it but she was still able to bite.

gentle, but firm. get up high on her neck near the base of her skull and get a nice solid handfull.
also lift so her front paws are in the air and lean her back a bit so she's more upright and looking upish.
