Easy real easy but you need one of these.
Mandoline. $15 to $35 and one in picture is $33 at Amazon.
You just put in the right blade and run a potato down the flat part. Useful for lots of stuff. Nothing slices thin and consistent or thick as in the case of wot you want to do.
Look up Mandoline on the web for lots of models.

Actually I gave you much more then that.
I highly recommend a Mandoline. Super fast to clean after use. Easy to change the blades. It can do things only a skilled Sushi chef can do. Not saying you could use it on raw fish. Super thin ginger and cucumbers - paper thin.
