And I am a little nervous.
I'm hoping to figure out why I have horrible bloating, pains, and gas from certain foods. This has been a life long problem and it feels good to finally reach out. I hope he can actually be helpful.

Stop eating those foods. There. I solved your problem, pay me.
Have you tried eating yogurt? Probiotics can help. Now pay me more.

Some people really are sensitive to gluten. Celiac disease and all.

Yeah, I was actually being serious. If not a gluten allergy maybe it'll just be IBS, in most cases either one is manageable from what I know (very little tbh).

Yeahhhh, it'll probably end up like that.

Fortunately: no! I eat wheat gluten sausage with aplomb and my belly does okay. From my reading and experiments it's likely the short-chain carbohydrates in white flour that get me. I do pretty well with whole grain breads high in fiber.
I've been able to confirm I don't have Celiac or Crohn's. Those would be awful.

Yes, I'll probably end up with some diagnosis of IBS. I'd really like to understand exactly what bacteria and enzymes will specifically help me.

Well that won't be so bad to deal with. There's a whole world of low carb food around /r/ketorecipes /r/vegetarianketo.

Maybe a shit transplant? I know it's disgusting on paper, but it's done wonders for people.

I'd do it if the doc was convinced.

I met a guy once with it at a party. He wasn't really supposed to be there but my housemate felt like she had to invite him for some reason. I liked him. One of the few people I could talk to. I hate parties, though. They're ordeals for me. I don't enjoy them, I get through them. Well, I did, I decided to be kind to myself and swore them off forever.

Soooooo, yep, there's not really much to do. I'll hear back next week on blood work that might rule out some minor possibilities like a thyroid issue.
The advice as of now is just to minimize my symptoms by being careful about what I eat. The doc said my enzyme and simethicone consumption are safe and wise. Blargh.
I did get to keep my pants on. There was no butt touching.
