I can NEVER get a consistent fucking spicy level on my Chinese food. Is this a known Chinese problem?

Well, Chinese people appreciate flavorful, pungent food for the most part. They also like heat. They get annoyed when the white people insist on "make it special for me with less this and more that," and they think it tastes like crap, so they make it so they will like it, not the white person. Just eat it how they prepare it, and you may enjoy it more.

When I ask for them to make it the regular way, there is too little heat. And I don't like particularly spicy food... this is just too mild. If I ask for extra spicy, it burns my tongue off. But spicy can be all over the place. Yesterday, it was still way too mild. Goddammit.

Serious reply here. You can buy these in any store that caters to Mexicans. Usually in large bins and even plastic packets. Markets that cater to East Indians. From Amazon.con etc.
On business trips I Always carry them Frankly agricultural laws make this illegal. Like driving over the speed limit on occasion I break a law.

One warning - Buy them a couple years supply and store in a very tight jar. You will discover that chilies that look exactly the same can vary in heat - often the range is 1-3X because that is the nature of the product. You will quickly figure out how much to break off and add to your food to make you happy. Works great in many Italian dishes by the way,

My advice: tell them that you like it the way that Chinese people like it, and that you want to try it the way they think is best. They will be flattered, and may be more consistent.
