Is the default Arial/sans serif font, black, the most professional/preferred?

I've seen some people change to Georgia or Times New Roman. What do you think about that?

What about using a slightly different color, say, dark grey or navy blue?

I'd go with black Arial, it's standard, safe and predictable. You don't want your emails to stand out. It's like wearing a green tuxedo to a black tie event.

If you use a nonstandard font you run the risk of people focusing on the medium, not the message. The font should be "invisible" and let your message shine through. Black Arial accomplishes this.
