I think part of it is that Caitlyn Jenner was famous in his own right, whereas Chaz Bono was simply the daughter of someone who happened to be famous. Really, though as a case of someone in peak physical shape, having the best plastic surgery, being photographed (and photoshoppped) by one of the best photographers ever, Caitlyn Jenner is unrealistic for 99% of MtF transsexuals.
Also, FtM seems to go better than MtF in general. You can give a woman testosterone and she'll bulk up and grow a beard and more body hair (and maybe even get a receding hairline!) and her voice will drop, too. Giving a man estrogen won't take away body hair, facial hair, male voice, male pattern baldness or anything, really. Maybe it'll grow some misshapen A-cups but that's about it.

Actually, I've read that the hormones might actually affect body hair but not facial hair when looking up laser hair removal. There is a long time debate about rather or not estrogen affects male pattern baldness, but I doubt it completely "cures" it.
