Hell fucking no. Upgrades can break things, plus they bring services offline. You don't want all your users their connections to drop for a few minutes because there happened to be an update. You run that shit in a window early/late during the day.
You can certainly configure it to do it all automatically, though. There's plenty of options, but I prefer manual control. See cron-apt and unattended-upgrades

linux servers, specifically apt is used by most debian-derivatives, of which the most popular server distros are debian and ubuntu. the other popular ones use yum where it's a similar command. since php is mostly used by jokers on shared webhosts they dont usually use system-wide package managers. luckily most serious software doesn't use php anymore and has less retarded deployment strategies.
