Like chicken liver, but a lot tougher since it's all muscle. I tried beef heart too. It tastes like a really tough, lean steak, but was way more flavorful than any steak I've ever had. If you take the time to tenderize it, beef heart is really good.

Chicken hearts and beef hearts in Brazil on a grill are terrific - marinated in I don't have a clue but not at all tough and very tasty. I expected them to be tough

From experience marinating does add flavor but in practice does not really penetrate and do all that much to really tenderize. You can test this out with two chunks of Chuck steak - Marinate one 24 hours and the other NOT and then grill. What ever they do in Brazil does work. Chinese method of using baking soda (which you must wash off b4 cooking) Does tenderize tough meat in total but it also makes the meat mushy - OK for those Chinese dishes but not ok for any other use.

That's because you don't know how to marinade. You're supposed to poke hundreds of holes in the meat with a fork. This tenderizes it and allows the marinade to seep through. And you're supposed to marinade with something that contains a bromelain.
