Seems legit.

But what is that stuff on the outside of hotdogs? And what the hell is that stuff on the inside hotdogs?

In America are they technically labeled as meat flavoured sausages, and not meat sausages because of the lack of edible animal content contained?

I assume that in America the animals are processed for human consumption, the unsaleable cuts used for animal consumption, the leftovers undergo chemical removal of tissue for hotdog manufacture, the remains are rendered for cosmetics, and what is left is used for fertiizer.

Collagen casings are mainly produced from the collagen in beef or pig hides, and the bones and tendons. It can also be derived from poultry and fish. They have been made for more than 50 years and their share of the market has been increasing. Usually the cost to produce sausages in collagen is significantly lower than making sausages in gut because of higher production speeds and lower labour requirements.

The collagen for artificial casings is processed extensively and, as a raw material, it is similar to bread dough prior to final production. It is then extruded through a die to the desired diameter, dried and shirred into short sticks up to 41 cm long that contain as much as 50m of casing. In a newer process, a form of dough is coextruded with the meat blend, and a coating is formed by treating the outside with a calcium solution to set the coating.

The latest generation of collagen casings are usually more tender than natural casings but do not exhibit the “snap” or “bite” of natural casing sausages. The biggest volume of collagen casings are edible, but a special form of thicker collagen casings is used for salamis and large caliber sausages where the casing is usually peeled off the sausage by the consumer. Collagen casings are permeable to smoke and moisture, are less expensive to use, give better weight and size control, and are easier to run when compared to natural casings.

Photo is not a true representation of the way Syntax wood eat this delicious soup. More raw onions and no one eats Menudo without a lot of broken up dried red chile peppers sprinkled all over.
Photo is also missing the usually orange grease that floats on top.

This is one of those dishes that is best obtained from a Mexican deli. Its a huge amount of work in prep and many many many hours of cooking. Not practical to make unless one has a very large family.
Considered a great hangover cure. Only available on Sat-Sundays.

Only once was I served a bowl of Menudo without the Orange Grease - Cost was double and it was a classy soup and worth every penny - funny how I have not returned
I don't care for the grease -

One loads this soup up with lots of fresh lime juice - helps cut the grease.
