I never knew that there were so many varieties and qualities of soy sauce. The stuff we get here in the States, like that Kikkoman, is very low quality: not aged enough, sulfurous, and watery. I have had the pleasure of having some very high-quality, aged soy sauce while in China, and it is a hue difference.
