Umami is the fifth taste in food, discovered by a Japanese food scientist (hence the Japanese name). It refers to a warm, salty, full mouthfeel, and is from glutamic acid in foods such as Parmesan cheese. Do you like umami?

Here is an experiment to understand it. Cook some spaghetti. Mix in a little olive oil, salt, and pepper. Now taste it. Then add some grated Parmesan on top, and taste it again. What you experience n the second round is umami.
