A forum I follow on occasion - people who live in a very large city - point out the huge number of restaurant & street food items where lamb is listed as the meat. They point out there are no sheep raised in the area or imported. So lamb is??? No one really knows.
Locally here in San Diego area. Huge Chinese supermarkets with meat cases 20 times larger then cases most supermarkets have - A section of Offal takes up a large amount of meat cases. Ovaries from pigs lambs cows - all separated and in huge layers. I own probably 20 Chinese cook books and none mention wot one does with - betting its for sausage.
