A number of ingredients contribute to mouth feel. Tip a glass of classy wine and look as the Glycerin like trails - cheep box wines no such - Full body feel
Texture is a major component to taste - Recipes that use the same ingredients but are a mix of different preps so result ends up more complex upon tasting
Example take the pork I made for my Green Chile Stew fresh from freezer as last made I made2much - Pork was grilled first to bring out the sugars and the brown crispy takes extra work
Could have done the stew real fast buy just dumping raw pork into pot but with the Grill n brown n sugars one ends up with a much more complex result taste mouth feel and Mouth Orgasam
Slime - Okra can be such and the Tomatillo's as in photo are NOT green tomatoes and offer a sour and somewhat slimy nature that does disappear on cooking much like Okra and make for BODY lots of Body which makes for texture and mouth feel

Complexity - Go to taco bell and get a taco and its edible - cheep meat cheep cheese nor does it resemble a real taco but one can fill up on
Try a real taco with quality grilled or even Carnitas which is pork deep fried so crisp on outside and tender inside and the complex salsa like add ons - Fresh tortilla is far more better then what comes out of package - Squeeze of lime and almost impossible to explain what some call Salsas yet are really Chile which is NOT the plant Chile but is made from
Some use dried peppers and others fresh and very complex or simple ways to make that make for one hell of variations for a simple real taco - Extend that to every other dish prepared on Planet Earth

Hardly authority - the down side of living here say compared to Los Angeles
In LA lots of Russian and Cuban and a world of world cuisine. San Diego is more about lay'd back beach existance with border food everywhere
A few nice places to eat but NOTHING like LA or San Francisco or NEW YORK CITY - NOT much French here and a good Bouillabaisse is near impossible to get eating out so I end up spending hours n hours for wot should be a simple fish stew

It has been years now since last time - About 6 years ago mates I work with at Qualcomm took a special outfitted company van loaded with stuff to test Satellites and drove up the 15 from here to Vegas
Stopped in your town of course for lunch along the way. No memories of where we ate. Up until recently Qualcomm had a product called Omnitracs which was first product of the company - they just sold it off - in Vegas Q has a remote facility to operate the GEO Satellite dedicated to Ominitracs - Mostly used to keep track of big trucks across the planet. Had a friend who worked as Exec for electronics company in San Fernando valley and he chose to live where you live which can you believe meant driving all that way twice a day YIKES
Remote in Vegas just in case Earthquake takes out primary site

Signal Processing
In humans, the sense of taste is transmitted to the brain via three cranial nerves. The VII facial nerve carries information from the anterior 2/3 part of the tongue and soft palate. The IX nerve or glossopharyngeal nerve carries taste sensations from the posterior 1/3 part of the tongue and the X nerve or vagus nerve carries information from the back of the oral cavity and the epiglottis.
The gustatory cortex is the brain structure responsible for the perception of taste. It consists of the anterior insula on the insular lobe and the frontal operculum on the inferior frontal gyrus of the frontal lobe. Neurons in the gustatory cortex respond to the five main tastes.
Taste cells synapse with primary sensory axons of the mentioned cranial nerves. The central axons of these neurons in the respective cranial nerve ganglia project to rostral and lateral regions of the nucleus of the solitary tract in the medulla. Axons from the rostral (gustatory) part of the solitary nucleus project to the ventral posterior complex of the thalamus, where they terminate in the medial half of the ventral posterior medial nucleus. This nucleus projects to several regions of the neocortex, which include the gustatory cortex.
Gustatory cortex neurons exhibit complex responses to changes in concentration of tastant. For one tastant, the same neuron might increase its firing and for an other tastant, it may only respond to an intermediate concentration.
Taste and Other Senses
In general the Gustatory Systems does not work alone.
While eating, consistency and texture are sensed by the mechanoreceptors from the somatosensory system. The sense of taste is also correlated with the olfactory system because if we lack the sense of smell it makes it difficult to distinguish the flavor.
