In the US, you can get any Master's degree or Doctorate you want, in any field, if you have any Bachelor's. Of course you will have to show competence and catch up, but yeah, you can choose any field.

Acceptance to a graduate program generally requires a bachelor's degree in some related field, and the requirements may vary by institution. Making the jump from arts to sciences or vice versa shouldn't be a problem if your bachelor's is in a relevant area or the field you want to go into is fairly interdisciplinary, but a physics Ph.D. program probably won't pay much attention to your application if you have a visual arts BA. (or maybe they'll be intrigued enough to call you in...) Most schools will list what is expected of an applicant and detail what is required in the applications process on their web site. Don't be afraid to look around and download application materials just to see what will be expected of you.
