In most countries, the word "fat" has negativity attached to it thanks to the media mixed with Photoshop. People are generally stupid, so we let others tell us how to think and feel. We as a society have come accustomed to the idea that "fat" means disgusting and undesirable.
When you told your girlfriend she was fat etc., you were basically telling her she is disgusting, undesirable, unattractive, and even worthless...since fat people are saw as worthless in society where people have a view that says, "If you are not beautiful, if you don't have long blond hair and I can count your rips, then you don't mean anything to the world."
Everyone wants to be worth something and desirable, and most women want to be attractive too. As her boyfriend, she should be taking what you are saying to heart the most...and it appears she has.
