This might surprise you, but this topic is actually for DM, and for cooking questions for DM. Your reply isn't actually either of those things. Thanks.

@495,633 (G)
He emailed me when he was in Hong Kong and couldn't post, and he asked for more information so he could give me a recipe.
Anyway, I doubt it will be served with wine. Something spicier might be good, but an alfredo-ish sauce could work too. No shrimp or weird-looking seafood. Thanks.

John Minor moving to major role as successor to Mark Kvamme at JobsOhio - Columbus
Jeff Bell | Business First
John Minor, a former New York investment banker with JobsOhio since May 2011, will take the lead at the economic-development agency in November.
John Minor knows he has big shoes to fill as successor to founding JobsOhio President Mark Kvamme.
Kvamme, a former Silicon Valley venture capitalist and long-time friend of Gov. John Kasich, has been the governor’s job-creation point man since joining the Kasich team in January 2011. The California native’s energetic advocacy for Ohio has been credited with helping Kasich give the state a much-needed makeover as a good place for business.
Kvamme will resign Nov. 1 as JobsOhio’s president and interim chief investment officer as part of a transition plan developed last year by the private, nonprofit corporation that directs the state’s job-creation efforts.
Minor, a former New York investment banker with JobsOhio since May 2011, will take on both roles.
“Mark obviously has certain qualities and characteristics that are difficult to replace,” Minor said, pointing to what he called Kvamme’s energy, charisma, creativity and marketing mind-set. “I’m going to try to have the same kind of energy that Mark has. In terms of how people describe me, time will tell.”
past connections
One thing Minor and Kvamme have in common is a long-standing business relationship with Kasich. Minor, 42, worked with Kasich on client accounts when the two were at Lehman Brothers from 2002 to 2008. Kasich approached Minor about working for JobsOhio when he became governor.
“I found this to be a good opportunity to come to Ohio, make a difference and have an impact,” Minor said.
Minor, a native of Richmond, Va., worked in investment banking for 14 years at Lehman Brothers, Barclays Capital and Evercore Partners. He was a managing director at Evercore from 2010 until joining JobsOhio.
You're right — he's not Cajun at all!

Matt, when I make battered fish I season the fillet with salt and pepper before flouring to give it a kick
Is there anything else I can use for other tasty flavors

Add some ground cayenne pepper as well.
