After some poking around I found out it does send your email address in the redemption URL if you email a gift from steam, but not gamer-name.

Yeah it's a shared account so I don't want the name out there. I did figure out how to gift semi-anonymously. I just sent the gift to one of my own email accounts and emailed it from there.
