I said LEAN Pork - Fatback is the Black people's unhealthy way to prepare - Ham Hocks n Collards are terrific and I have worked out how to do this very healthy but it does take X-tra tyme

True I fully admit to not having a clue about Kale - Then with the power of the GoogleGen I discover I no a great deal about Kale cause I been eating its 1st Cousin.
Brassica oleracea the Family & shocking cause wiki says Collards are extremely similar genetically.
I b chowing down Collards with on occasion Ham Hocks (fat removed with is not so much so easy)

Kale: In the Netherlands, it is very frequently used in a traditional winter dish called boerenkoolstamppot, which is a mix of kale and mashed potatoes,
with fried bits of bacon added to it, and usually served with rookworst ("smoked sausage").
1. Rinse and sort beans according to package directions. Place beans in a large bowl; add water to 2 inches above beans. Cover and chill 8 to 12 hours.
2. Drain beans, and place in a large saucepan. Add onion and 8 cups broth. Tie together thyme, parsley, bay leaves, and, if desired, sage and basil with string; add to bean mixture. Add ham hocks and, if desired, rind. Bring to a boil over medium-high heat. Reduce heat to low, and simmer, uncovered and stirring occasionally, 1 hour or until beans are tender but hold their shape. Skim off foam with a spoon.
3. Remove hocks, and cool 5 minutes. Remove meat from bones; discard bones. Return meat to bean mixture. Add Kale, and cook, stirring occasionally, 15 to 20 minutes or until tender.
4. Sauté garlic in hot oil in a large skillet over medium-low heat 2 minutes or until light golden. Add tomatoes, and sauté 5 minutes. Stir tomato mixture and remaining 1 cup broth into beans, and cook, stirring often, 5 minutes or until liquid is reduced by half. Discard herb bundle and cheese rind; season beans with salt and pepper to taste. Serve immediately.

Packets suck - I keep a bottle of Oyster sauce in frig - Add a bit of soy sauce I have a jar of chicken stock. Obtained from Smart & Final - Betting a cube of bullion might not be any better then the packets?
I always add sliced Onion at the get go and if tyme brown it and if not just toss it in pot -
Also quick Ramen is a great excuse to get rid of veggies in frig and maybe a left over chicken drumstick or even some luncheon meat.
AND AND if you have never tried a real bowl of the real Ramen? Check out web for such in your hood.
IF you do go the added veggies n stuff? Cook those with broth in a pot and do the noodles in plain water and add at end - trying to do it all will make mush out of noodles and I only cook them exactly 2 mins not three - They continue to soften with all the other stuff - maybe even 1.5 mins does it for a more better noodle texture
