Bugs were patched. And in fairness, Skyrim's a vast game. I'm not surprised that some bugs occurred. And for what it's worth, I never experienced any real bugs in my game.'
The quests, I enjoyed. But it's not just the quests, it's that there's this whole huge world to explore and move around. Don't get that in many other games.
And if you're willing to consider mods, then the game's potential increases. Quite a bit.

i modded quite a lot with my skyrim, i had like 130 mods at one point
in fact i got more enjoyment out of modding skyrim than i ever did actually playing skyrim
also i thought skyrims world was kind of dead and uninteresting, i wanted actual things to do in that world that wasnt "fetch my sword from these bandits, watch out for zombies"

But it's really much more, since I had it on the Xbox 360 too and did two playthroughs on that.

I think what helps me quite a bit is that I roleplay my characters quite a bit, give them motivations and stuff. So I project my own sort of depth onto it, so to speak.

Here is my new character. On the Any Life starter mod, I selected attacked and it started me near a crashed caravan of my brothers near a giant camp with mammoths.
I always liked the idea of playing as a big cat warrior who resembles a tiger, but I learned from Oblivion (which I haven't still beat) not to make him bright orange so I went for a sort of orange-brownish. I do not want to feel like I'm playing a rampaging Tony the Tiger.
