If you deep fry a lot like I do, you'll find the oil gets dirty and full of junk rapidly. But all you need to make it good as new again is: a colander, some paper towels or napkins, a piece of string, and a large bowl. Arrange these items as shown and just pour the dirty oil into the colander. Make sure to let the oil cool first -- you'll end up burning yourself badly if you try with hot oil. While the oil is filtering, use a rubber spatula to scrape the crud from the bottom of the fryer into the trash and wash the fryer and basket with hot soapy water and rinse.

This won't extend oil life indefinitely, but does give you more frying time out of your oil.

This practice has nothing to do with being eco-friendly, but rather with the Chinese food black market, where gutter oil is presented as a cost-friendly solution for small businesses.

Why is it called “gutter oil”, you ask? Well, sadly enough, the name is not a metaphor, but it merely describes the source of the oil used illegally in the food market. The process of turning sewer sludge into cooking oil is quite simple and disgusting: after draining sewers, trash bins, gutters and anything that may contain cooking oil and animal parts, the content is boiled and then filtered. As expected, the final product is not only unhealthy (and gross!), but it can be fatal in some cases, as it contains carcinogens and other dangerous toxins.

On the bright side, it seems that only 1/10th of the cooking oil in China is actually gutter oil
