how come conservatives are so quick to denounce the government but as soon as the issue of gay marriage is raised they all of a sudden want the government to "protect the sanctity" of marriage even though marriage is a government institution

"the government" is a body of people that change regularly. They may not like what THIS government is doing.

either you didn't read my post or you're suffering from a case of not fucking getting it, in which case the point of "they hate the government until someone does something that affects their religious worldview, then welcome the government back with open arms"

Don't forget the military. Government spending must be cut but try to cut .01% off the Pentagon budget and America will fall to Al Qaeda tomorrow.

The answer is that Team Red/Faux News neoconservatives aren't actually in favor of small government at all (see: deficits and spending under Reagan).

Then they should rant about this government, not the government in general. They could also just come out and say that they only support the government interfering with people's lives when it doesn't interfere with them or their beliefs. At least they would be laying the turd on the table at that point by taking an "I only agree with the government when it agrees with me. The rest of the time it is tyranny and theft!" stand that everyone could plainly see was hypocritical and stupid.
