Breaking Bad season 5 sucks. How's Walt get to be such a master cooker without having tried that shit anyways? Anyway, the show clearly explains in the earlier seasons that walt has a background in chemistry and eventually ended up teaching chemistry (after doing some things i forgot but he got fucked over for it) and that making meth is a chemical process, and that Methamphetamine is a substance which can be produced through chemistry, one way or another. And that the purer the Methamphetamine the better the meth. So, he figures out a way to make meth since his background in chemistry and presto.

I bet chemists make all kinds of bad ass chemicals, like Drano or floor stripper, that are way too toxic to test composition by ingestion.

there is a difference between a manufactured chemical compound, such as meth, and an organically grown plant. like pot.
you would do better to compare it to coke or heroin since those are two drugs that are regularly adulterated and would have a scale of pure to impure.
you can measure the melting point (i think) to determine how pure cocaine is, and the more pure the cocaine the better, or so i've heard.
meth would be kind of like that except that it doesn't come from a plant, it's a chemical process that results in meth. but meth would also be subject to impurities, as evidenced by things like the 76% other people bragged about, or jessie adding cayenne pepper to add a kick. walter, being a trained chemist who worked professionally as a chemist would be more than capable of manufacturing meth to a higher degree of purity than filthy biker gangs. he produced 97% pure meth because he's a chemist. a junkie produces tainted garbage with coke bottle beakers and crock-pots.
