It was at a family event (niece's birthday) and steak was not available. I always eat my steak really rare (ie still cold on the inside).

A Mega gamble. Fresh ground meat from a trusted source ground with CLEAN EQUIPMENT and handled carefully with just a few hours between sell and cooking - Could eat it raw.
Bit of bacterial and the oxygen exposure and a little tyme - You get to grow lots of bacteria.
Of course if you want to grow 10 miles of Escherichia coli O157:H7 or Salmonella U Win
