I'd chose setting up orphanages. I've always had a warm spot in my heart for children.
Accommodation for homeless people as well. It sucks to have no roof on top of your head while being hungry simultaneously.
Providing the required amount of money that underrated bands need. Just because.

Too be fair, you didn't specify what you meant by "time and money was no object." Did you mean that you're a billionaire with absolutely nothing to do with your time, or do you simply live an existence where time and money are of no concern? To a hunter-gatherer living a foraging lifestyle in an area where food, water, and shelter are ample and disease and famine are not an issue, time and money is no object, even though they have no money. Time and money are no object to Bill Gates either, but that's because he's so fucking rich that he can do whatever the fuck he wants, but his time is still valuable.

That's important, because you're assuming that just because time and money are no object, one should devote efforts towards something altruistic. If I was a billionaire, I would do something altruistic. I'd probably put all my money towards researching drugs and medicines that big pharmaceutical companies won't spend the money on because they can't be patented. That way the FDA would have to approve hundreds, if not thousands, of drugs and herbal remedies for treatment of diseases, and they would all be public domain. We could also know once and for all which natural medicines actually work and which ones are hippie bullshit. Imagine how much medical costs would decrease when the big pharm companies have to compete with medicines that any company can produce.

If time and money were no object simply because I had no money and needed no money, and time were not an issue, I would probably focus on meditation, zen, spirituality, philosophy, writing, and lots of reading. Basically I'd be like Buddha.
