Buy some apples. Chop them up. DO NOT Wash them prior to Chop up. You need the wild yeast.

Crush up the apples to a pulp with mallet or wood board and put all contents in2 a jug and put a thin rag on top - DO NOT cap off - Let it ferment and when the foam goes to bottom (not all will) strain and enjoy

OK So you can look up how to get wax off and just let them sit in a bowl for a week to pick up floating yeast in air. Around here Organic apples are not waxed. Farmer Market fruit is also untouched except by hands of course.

Back as a teen I worked at wot is now Ralphs. Supermarket checker which paid just super for a teen. We had on sale regular Apple cider and a couple weeks later people were bringing back the stuff cause it was fermenting (maker failed to heat it up enough to kill the yeast)

We were told to trash that juice LOL - Not one drop was wasted.

Tried with bread yeast and store bought apple juice, and it "works" in the sense that you will make an alcoholic beverage, but holy hell it is nasty. The yeast is a HUGE part of wine and beer's flavor and you HAVE to get a good one, otherwise you'll just make prison wine.
