Maybe try a new profile? You'll have to reinstall your extensions after creating a new one, but it might be worth trying if you're doing that all the time already.

Also, do you sync your profile with your Google account? That might be the source of some confusion. If you are, then try syncing after you have everything set up how you want it.

Does this happen with any errors, maybe about a corrupted or un-openable profile? Also do you lose anything else along with your extensions, like your bookmarks?
Next time it happens, check c:\users\becky\appdata\local\google\chrome\user_data\default\extensions - and see if there a bunch of folders with random alphanumeric names.
