Usually I go with a mix of Rare and Cooked brisket and Tendon.
Also although most Phos are similar from Pho place to another. their is a wide range of differences in complexity to the broth so do check out Yelp and recommends in your area.

I don't think it really has any taste of its own. Its more a texture item. Chewy and its cheep so all you need is ask them to put just one bit in the next tyme you order and give it a go.
Where you with people who know how to load it up with the condiments? I notice Vietnamese families have mixed tastes on wot they put in theirs. Some may never use up all the fresh Basil yet I make sure I put all of it in, including the thin stalks.
