cant wait to make some big ass tacos, stuffed full of quality beef and authentic mexican seasonings and spices, with some freshly cut, crisp lettuce and some fresh, just-out-of-the-garden grown tomatoes, along with some quality cheeses.

Was my Sunday nites dinner except was Carnitas. Not home made as I bought the meat pre cooked but did all the rest. No cheese. Mini as I bought fresh street taco size tortillas.
Avocado instead of cheese for me. Cheese good however. In Mexico for the most part no cheese but also no Avocado.

Yea but on some things I do more better then others. 3 simple ingredients but I often flub up on ratios - Reminds me I am out of Jalapenos and need some for tonight dinner.
Just put on list - And IF Lucky cause my bowl of Avocados is loaded but with unripe ones - Going to look for ready to go, and until you asked this - Guac was not in plans but now it will b part of dinner plans.
I make mine to chunky but wood rather it cum on not so much.
