Now as to can anything. I do use cans of tomatoes in cooking. I cannot imagine veggies or fruit in a can. One exception I can think of is making Cherries Jubilee with can dark cherries. I keep frozen corn and peas in freezer and maybe some frozen Okra. So much fresh fresh fresh all around me. Even real farm fields to buy directly from weekly.

My only experience with southern cooking is Cajun cooking. Tiny amounts of meat are added to veggies to boost FLAVOR

Very cool for u to b. Do consider that Buddhist's in Japan do eat meat. Also consider that if Planet Earth were to adopt the concept of meat as a condiment rater then the main course, our Earth wood b so much better off. Poor people use small amounts of meat with large amounts of greens. Most Chinese cooking is bits of meat with rice n veggies. So that is the original basis of Southern cooking. Bits of bacon go a long way to enhancing Greens n such.

What? But that's wrong, yankee. Southern cooking is based on grease and animal fat. Not veggies and meat flavoring. We boil hog hocks to make soup stock. We fry pig skin because chips aren't oily enough. Southern cooking is all about meat fried in fat.
Also, cajun cooking is just charring your meat so it doesn't taste like swamp rat. It tastes like char.
